Nutritional composition of mustard
There are different types of mustard: black (Brassica Nigra), brown (Brassica Juncea) and white/yellow (Brassica Hirta or Brassica Alba). Black and brown mustard seeds have more heat and pungency and yellow/white mustard tends to have milder taste.
